Shrimp Scampi (Italian-Style Garlic Butter Shrimp Pasta)

Shrimp Scampi is a fast and flavorful Italian-American pasta dish made with tender shrimp sautéed in olive oil, butter, garlic, and white wine. The addition of lemon juice and fresh parsley makes it light, bright, and perfect for both casual dinners and special occasions.

Cook the Pasta
Bring a large pot of salted water to a boil. Add the linguine and cook until al dente.
Reserve ½ cup pasta water, then drain and set aside.

Sauté Garlic and Shrimp
In a large skillet, heat olive oil and 1 tbsp of butter over medium heat.
Add sliced garlic and cook until fragrant (30 seconds), then add shrimp.
Sauté for 2–3 minutes per side until pink and opaque. Remove shrimp and set aside.

Make the Sauce
In the same skillet, pour in white wine and lemon juice.
Let it simmer for 2–3 minutes until slightly reduced.
Add remaining butter, lemon zest, red pepper flakes, salt, and pepper.

Toss Pasta and Shrimp
Add the drained linguine and shrimp to the skillet.
Toss gently to combine and coat everything in the sauce.
Add a splash of reserved pasta water if needed.

Garnish and Serve
Plate immediately. Garnish with fresh parsley, a pinch of Parmesan (optional), and a wedge of lemon.
