Sauté Onion and Garlic
Heat olive oil in a skillet over medium heat. Add sliced onions and sauté for 3–4 minutes until softened. Add garlic and cook for 1 more minute, stirring frequently so it doesn’t burn.

Make the Tinga Sauce
Add chopped tomatoes and minced chipotle peppers to the skillet. Stir well and cook for 5–6 minutes until the tomatoes break down. Pour in the chicken broth and season with oregano and salt. Simmer the sauce for another 5 minutes to blend the flavors.

Add Chicken and Simmer
Add the shredded chicken to the pan and stir to coat with the sauce. Simmer on low heat for 5–7 minutes, allowing the chicken to absorb the smoky, spicy flavors.
