Chicken Enchiladas Verde are a vibrant Mexican dish made with soft tortillas filled with tender shredded chicken, smothered in a homemade tangy green tomatillo sauce, and baked to perfection under a blanket of melted cheese. It’s comforting, flavorful, and perfect for family dinners or casual gatherings.
Preheat the oven to 375°F (190°C). Lightly grease a baking dish with olive oil.
Warm the tortillas for 30 seconds in a microwave or skillet to soften them for rolling.
Spread a spoonful of salsa verde on each tortilla.
Add shredded chicken and a sprinkle of cheese.
Roll them tightly and place seam-side down in the baking dish.
Pour the remaining salsa verde over the enchiladas.
Sprinkle generously with the rest of the cheese.
Bake uncovered for 20–25 minutes or until the cheese is melted and bubbly, and the edges are lightly golden.
