Description

Creamy Tuscan Chicken is a modern, Tuscan-inspired skillet dish rather than a traditional recipe you’d find in Italy. It features tender seared chicken breasts bathed in a garlicky, sun-dried tomato–infused cream sauce, brightened with fresh spinach and Parmesan cheese. While it leans on classic Italian ingredients—olive oil, garlic, sun-dried tomatoes, Parmesan—the rich heavy-cream base and one-pan cooking style are an American innovation, designed for quick weeknight cooking. The result is a silky, savory sauce with pops of tang from the tomatoes and a gentle peppery note from fresh spinach, ideal spooned over pasta, rice, or alongside crusty bread.

Instructions

  1. Instruction Title: Season and Cook the Chicken

Pat the chicken breasts dry with a paper towel. Season both sides with salt and freshly ground black pepper.
In a large skillet over medium-high heat, add 1 tablespoon of olive oil.
Add the chicken and cook for about 4 minutes on each side, or until golden brown and cooked through (internal temp should be 165°F / 74°C).
Remove the chicken from the pan and set it aside on a plate.

  1. Sauté the Garlic and Sun-Dried Tomatoes

In the same skillet, reduce the heat to medium.
Add the remaining 1 tablespoon of olive oil.
Add minced garlic and cook for 30 seconds, stirring frequently to avoid burning.
Add chopped sun-dried tomatoes and sauté for 1 minute.

  1. Make the Creamy Sauce

Pour in the heavy cream and chicken broth.
Use a wooden spoon to scrape up any brown bits from the bottom of the skillet.
Bring to a gentle simmer, then reduce the heat to low.

  1. Add Cheese and Spinach

Stir in the grated Parmesan cheese and whisk until fully melted and the sauce is smooth.
Add the baby spinach and stir until it wilts completely, about 1–2 minutes.

  1. Combine and Finish

Return the cooked chicken breasts to the skillet.
Spoon the creamy sauce over the chicken and simmer for another 2–3 minutes to reheat and blend flavors.
Garnish with freshly chopped parsley and a little extra Parmesan if desired.
Serve hot with pasta, rice, or crusty bread.
