Rinse the branzino inside and out under cold water and pat dry with paper towels. Season the cavity of each fish with salt and pepper. Stuff with garlic slices, lemon rounds, and fresh thyme or rosemary. Drizzle olive oil over the outside and rub it gently over the skin.

Preheat and Oil the Grill
Preheat your grill to high heat (about 450°F). Use a grill brush to clean the grates well, then oil them using tongs and a paper towel dipped in oil to prevent the fish from sticking.

Place the fish directly on the grill grates. Close the lid and grill for about 5–6 minutes per side, or until the skin is crisp and has good grill marks. The fish is ready when the flesh is opaque and flakes easily with a fork.
