Spaghetti Aglio e Olio is one of Italy’s simplest and most iconic pasta recipes. Originating from Naples, it’s made with just a few pantry staples—garlic, extra virgin olive oil, spaghetti, and chili flakes—but packs big flavor. It’s the perfect go-to meal for a busy night or a midnight craving.
Bring a large pot of salted water to a boil.
Add spaghetti and cook until al dente, according to package instructions. Reserve ½ cup of pasta water, then drain.
While the pasta cooks, heat olive oil in a large skillet over medium heat.
Add sliced garlic and cook slowly for 2–3 minutes until just golden. Do not let it brown or burn.
Add red pepper flakes to the garlic oil and cook for 30 seconds, stirring constantly to release flavor.
Add the drained pasta to the skillet with garlic-chili oil.
Toss everything well to coat. Add a few splashes of pasta water if needed to loosen the sauce.
Transfer the pasta to serving plates. Garnish with chopped parsley and grated Parmesan if desired. Serve hot.
