Tagliatelle al Limone is a light and luxurious pasta dish from southern Italy. It combines fresh pasta with a simple sauce made of cream, lemon zest, and Parmesan cheese. The citrus notes brighten the richness, making it perfect for spring or summer dining.
Bring a large pot of salted water to a boil.
Add the fresh tagliatelle and cook for 2–3 minutes (or according to package if dried).
Reserve ½ cup pasta water and drain.
In a large skillet over medium heat, melt the butter.
Add the heavy cream and stir in the lemon zest. Simmer for 1–2 minutes.
Reduce heat to low. Stir in lemon juice and Parmesan cheese.
Whisk until melted and smooth. Season with salt and pepper.
Add the drained tagliatelle to the pan and toss gently to coat.
Add a splash of reserved pasta water to loosen if needed.
Plate the pasta and top with extra lemon zest and freshly ground black pepper.
Serve immediately while creamy and warm.
